Deliveries in south England can be expected within 24 hours. For more distant deliveries, please allow 48 hours. We offer our cupcakes with a variety of icings. For each cupcake, you can choose chocolate, buttercream or creamcheese icings. If you require the icing to be a particular colour, this too can be included in your order. Please note however, that due to the inherent colour of the chocolate icing, we cannot supply this in varied colours.

INGREDIENTS:

Cupcake:

60 grams of unsalted butter at room temperature
180 grams of caster sugar
1 teaspoon of vanilla extract
150 milliliters of whole milk
2 eggs
1 tablespoon of instant coffee
a drop of hot water
2 teaspoons of baking powder
60 grams of unsweetened cocoa
a pinch of salt
220 grams of plain flour

Icing:

250  grams of sifted icing sugar
30 grams of sifted cocoa powder
80 grams of room temperature
25 milliliters of milk

Method:

1. Set your oven for 180 degrees so that it can preheat while you make your cupcake batter.

2. In a large mixing bowl take your butter and caster sugar and cream them together.

3. Add the vanilla and milk and mix until the ingredients are combined.

4. Next add the eggs and mix these in until combined.

5. Melt the coffee with a small amount of hot water and add to your batter mixture – the coffee really beings out the flavour of the cocoa – if you cannot have caffeine use decaf or  just skip this step.

6. Using a sieve, sieve the baking powder, cocoa, salt and flour in a separate bowl, gradually pour the flour/cocoa mixture into your wet batter and mix constantly until you have a smooth batter.

7. Take a muffin tray and put the cases in it. There is no need to grease the tray the cases will not stick in there.

8. With a good ice cream scoop place a scoop of batter into each case. This should make each case 1/2-2/3 full of batter. You can use regular spoons though an icecream scoop makes the job very fast.

9. Put in the oven and cook for 20-30 minutes. Check your cakes with a wooden cocktail stick and it should come out clean. If the stick still has batter on it cook for a few minutes.

10. Put the cupcakes on a cooling rack and wait until cool to ice them.

Chocolate cupcakes are usually iced with chocolate icing to make them even more chocolatey. To make the icing:

1. Beat together the Icing sugar, cocoa and butter once the mixture is combined add the milk if the consistency is too thick.

2. Put the icing in a piping bag and ice the cakes.

3. Immediately put on the sprinkles and any decorations before the icing sets.

We also have a carrot cake cupcake—again, not just a vanilla cupcake with a carrot shreds and an orange coloured topping. No, our carrot cake cupcake is a really good carrot cake put into a cupcake. All of our cupcakes are home-baked. Not only are they literally baked at home, but they are baked with the finest ingredients and each cupcake is created with tender love and care. No two cupcakes are the same. And no two batches are exactly the same. These aren’t cupcakes that come off an assembly line in a large factory with people wearing hair nets and large latex gloves. No, these are baked in our kitchen, in our stove, wearing our flower covered oven mits and “Best Mom” aprons.
